Ginger Bread Men
The end of 09' is nigh and no matter what creed or race we are it can get a bit exciting around this time. Sally and I love tradition and Christmas is a great time for creating beautiful gifts and delicious tucker. Here is a recipe for one of our favourites.
Ginger bread men
3 cups spelt flour
1/4 teaspoon of salt
3/4 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup unsalted butter, room temp.
1/2 cup muscovado sugar
1 large free range egg.
2/3 cup of mollasses
Note: to prevent mollasses sticking to to the measuring cup, grease with vegetable oil.
- Cream the butter and sugar until light and fluffy.
- Add the egg and mollasses and beat until well combined.
- Gradually add flour while beating until incorporated.
- Divide the dough in half, wrap each half in plastic wrap and refrigerate for at least two hours, or overnight.
- Preheat oven to 180 degrees C
- Roll out dough to a thickness of 1/4 inch. Cut out shapes with a cutter or just get creative.
- Spatula cookies onto a baking paper lined tray about 2.5 cm apart.
- Bake for 8-12 minutes.
If you want you can decorate your little men with raisins, currants and candies for eyes and buttons. You can also skewer a hole in the tops if you want to hang them as decorations.
