Ginger Bread Men

Ginger Bread Men

The end of 09' is nigh and no matter what creed or race we are it can get a bit exciting around this time. Sally and I love tradition and Christmas is a great time for creating beautiful gifts and delicious tucker. Here is a recipe for one of our favourites.

 Ginger bread men

3 cups spelt flour

1/4 teaspoon of salt

3/4 teaspoon ground ginger

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 cup unsalted butter, room temp.

1/2 cup muscovado sugar

1 large free range egg.

2/3 cup of mollasses

Note: to prevent mollasses sticking to to the measuring cup, grease with vegetable oil.

  1. Cream the butter and sugar until light and fluffy.
  2. Add the egg and mollasses and beat until well combined.
  3. Gradually add flour while beating until incorporated.
  4. Divide the dough in half, wrap each half in plastic wrap and refrigerate for at least two hours, or overnight.
  5. Preheat oven to 180 degrees C
  6. Roll out dough to a thickness of 1/4 inch. Cut out shapes with a cutter or just get creative.
  7. Spatula cookies onto a baking paper lined tray about 2.5 cm apart.
  8. Bake for 8-12 minutes.

If you want you can decorate your little men with raisins, currants and candies for eyes and buttons. You can also skewer a hole in the tops if you want to hang them as decorations.
